Braised Cannellini Beans & Greens

This easy to make dish is a healthier alternative to pasta but still packs plenty of flavor. We’ve added smoky meat for extra taste and given you a choice of hearty greens like escarole, kale or Swiss chard to get a boost of antioxidants!

ingredients

  • Cup Extra virgin olive oil , plus more for finishing
  • 1 Small piece smoked & cured bacon, prosciutto or pancetta , cut into dice
  • 2 large carrots , peeled and diced
  • 1 Medium Onion , peeled and diced
  • 2 garlic cloves , peeled and minced
  • 2 Can (14 oz) good quality cannelloni beans , drained and rinsed
  • 1 Bay leaf
  • Good pinch hot red pepper flakes
  • half cup Freshly grated Parmesan cheese , plus more for finishing
  • 1 Cup Chicken stock
  • 5 Cups coarsely chopped escarole, Swiss chard, kale or spinach
  • kosher salt and black pepper , to taste

prep / directions

Heat oil in a large pan over medium heat and sauté meat for 1-2 minutes, stirring frequently. Add onions, garlic and carrots and cook until onions become translucent, about 3-5 minutes. Add beans, bay leaf, red pepper flakes, cheese and stock. Bring to a simmer and stir in chopped greens. Simmer, covered, until sauce thickens and flavors meld, about 15 minutes more. Season with salt and pepper to taste. To serve, divide greens and beans evenly among 4 serving bowls. Garnish with freshly grated cheese, drizzle with olive oil and serve hot. This is a one-dish meal that satisfies in every way!
